 Chicken Parmesan

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste
  • 1/4 cup olive oil
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
 

Instructions:

Preheat your oven to 375°F (190°C).


Butterfly the chicken breasts by cutting them in half horizontally to make 8 thin pieces of chicken.


Prepare 3 shallow bowls. In the first bowl, add the flour. In the second bowl, add the beaten eggs. In the third bowl, mix the breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper.

Coat each piece of chicken in the flour, shaking off any excess. Then dip each piece of chicken in the egg mixture, making sure it's coated all over.
Finally, coat each piece of chicken in the breadcrumb mixture, pressing the crumbs on gently to make sure they stick.


In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the chicken and cook for 2-3 minutes on each side, or until the chicken is golden brown and crispy. You may need to cook the chicken in batches depending on the size of your skillet.

Transfer the chicken to a baking dish or oven-proof skillet. Spoon the marinara sauce over the chicken, and then sprinkle the shredded mozzarella cheese over the top.


Bake the chicken for 20-25 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.

Serve the chicken Parmesan hot, with additional grated Parmesan cheese and chopped fresh parsley on top, if desired.see more
